Separating the skin from meat and having it pull back so easily, leaving a clean slate of protein.

    yes. horrible. it was a while ago, i'd like to try it again. my favorite part was an ice pick through the head and the guts spilling out across the cutting board. added to snake-like qualities of an eel, it's all bonus.
